Tofu Chicken Pot Pie

Crust 

3 cups flour
1 1/2 t salt
1 cup vegan butter
11 T cold water

Divide dough into 2 balls
and roll out to make
bottom and top crust
for 9×14 baking dish

Filling

Smart Strips Chick’n Style Strips
1 t salt
1/4 cup oil
1 c sliced carrots
1 1/2 c sliced celery
1 1/2 c diced onion
1 c peas

Brown strips in oil and salt
then add carrots, celery and onion
and cook until carrots are tender

Gravy

1/4 c oil
4 T flour
1 t basil
1 t thyme
1 t garlic powder
1 t paprika
2 T dehydrated onion
4 c almond or soy milk

Pour 2/3 gravy over veggies and tofu
Mix and pour into pastry lined baking dish
Pour rest of gravy over mixture
Cover with top pie crust
Cut steam vents

Bake 350 degrees
about 45 minutes
