Vegan Cornbread

1 1/2 cups soy or almond milk
1 1/2 T vinegar
1 cup cornmeal
1 cup flour
2 T sugar
3/4 tsp salt
1 tsp baking powder
1/2 tsp baking soda
2 T vegan butter

2 T ground flax seed (optional)

Melt vegan butter in frying pan
in 425 degree oven

Combine soymilk and vinegar
Stir and let stand

Mix dry ingredients in large bowl

Add soymilk mixture and melted butter
Stir until just blended

Spread batter in frying pan that
was used to melt butter

Bake 425 degrees
25-30 minutes

I took the leftover broccoli rice casserole
from a few days ago, blended in blender,
added some water, cayenne, and
can of diced tomatos and
cooked it for a few minutes.
Made a delicious soup to go
with the delicious
cornbread!
