Peach Cobbler

1/2 cup sugar
1 T cornstarch
1/4 tsp cinnamon
1 cups sliced peaches
1 tsp lemon juice
1 cup flour
1 T sugar
1 1/2 tsp baking powder
1/2 tsp salt
1/2 cup soy or almond milk
3 T vegan butter

Mix 1/2 cup sugar
cornstarch & cinnamon
in 2 quart saucepan

Stir in peaches & lemon juice

Cook stirring constantly
until mixture thickens & boils

Boil & stir 1 minute

Pour into ungreased 2 quart casserole

Mix together rest of dry ingredients

Cut in vegan butter

Stir in milk

Drop dough by 6 or so  spoonfuls
onto peach mixture

Bake 400 degrees

25-30 minutes

We had this for dinner tonight. Delicious!
