Stuffed Mushrooms

I had 11 mushrooms

So I took the stems out
chopped them up and cooked
them with a little vegan butter
and some Italian herbs seasoning,
cayenne, sage and garlic salt
Then I heated up the
leftover steamed carrots
from the other day and
mashed them up with
a potato masher
added the mushrooms stems
and a little red wine

1/4 cup chopped walnuts
1/4 cup dried cranberries

stuffed the mushrooms

put them on a greased baking sheet

400 degrees
20 minutes

Tasted Yummy!

We ate them all for a snack as soon
as Steve got home from work this afternoon
